So this is not exactly a Kick and Dinner dinner, but it is dinner, and it is quick and it is filling and it works when you are starving and all you have in the fridge are some leftover beans, (like the awesome beans we made to go along with the slow cooker chipotle pork a couple of posts ago) a carton of eggs, and maybe some cheese ….
Here is what you need and what I did:
That’s about it. Not including the leftover beans, obviously! You will need some eggs, (I use two per serving) which you should always crack first into a small bowl, (not directly into the pan - what if you break the yolk? Get some errant shell in it? hmmm? What then? Well, crisis averted) some butter or oil, or even PAM if you like that, some finely shredded cheese (whatever you may have on hand), and very important here: a small omelette pan. It’s basically just a little saute pan, non stick and really handy for all sorts of little jobs, but especially egg cookery. You will also need about two tablespoons of water.
Now get your pan over a medium heat and melt about a half a teaspoon of butter or oil until it gets slightly frothy……
Gently pour your eggs in,
and once you see the whites become somewhat opaque and start to bubble up, pour two (roughly) tablespoons of water into the pan around the edges of the eggs and cover it up with a lid.
Okay well, preferably with one that fits, but the best choice here is a clear lid so you can keep an eye on things. This whole deal takes about five minutes from start to finish, and you want your egg whites perfectly set (not all squin-geely, if you know what I mean) and the yolks warmed and still runny (or at least that is my preference). After about a minute, or right before they are looking perfect, sprinkle them with some cheese and turn off the heat. You want your cheese grated super fine so that it melts practically on contact.
Have your leftover beans re-heated and scoop them onto a plate or in a shallow bowl. You may find at this point that you have some water still in the bottom of your egg pan and if that is the case as it usually is for me, just gently lift out your eggs with a spatula (as opposed to sliding em out, water and all) and place them on top of your beans. Now you know how to make perfect eggs every time! Definitely hit this with a sprinkle of salt and a grind of black pepper, and maybe even a dash of your favorite hot sauce? Some salsa perhaps? And there you go.
